Aji Lemon Drop Mash Ferment
Small batch 1 gallon mash ferments of Aji Lemon Drop Chilies that were grown from seed in Indiana and produced in a commercial kitchen Compliant with the Department of Health. The stems were removed by hand before the chili peppers (seeds and all) were mashed. These are the same high-quality ferments that I use to create my award-winning sauces. This product will need further processing.
They will ship in square glass flip top “fido jars” that you can reuse. These are made with 3% Salt per weight of ingredients. They are over 2300 grams of the chili peppers, approximately 250 grams of white onion, and approximately 76.5 grams of sea salt. Nothing else. Fermented, then aged for months.
You’ll unfortunately be paying mostly for the glass jar, packaging, and shipping. Each Jar and ferment weigh almost 10 pounds. The packaging can handle two ferments, so that would be best to order.
